Healthy Super Bowl Snacks


Who’s excited for the SUPER BOWL?! It’s right around the corner and I’m already dreaming of the yummy snacks that comes along with it!! Here are a few of my favorite healthy recipes that help me stay on track throughout the game!

Baked Sweet Potato Chips
  • 1 sweet potato, peeled very thinly sliced
  • 1 tablespoon extra-virgin olive oil
  • Pinch of Cumin
  • Pinch of Paprika
  • Coarse salt

Heat oven to 400 degrees. toss sweet potato slices with olive oil and season with cumin, paprika, and salt. Lay out in single layers and bake, flipping halfway, until crisp and golden (20 to 25 minutes)
Zucchini Fries
  • 4 zucchini, quartered lengthwise
  • 1/2 cup freshly grated Parmesan
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoon chopped fresh parsley leaves
  1. Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
  2. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.
  3. Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.
  4. Serve immediately, garnished with parsley, if desired.




I have my favorite delicious, yet healthy dessert planned out, I just hope I can resist to not eat them all before the party!
No Bake Brownie Bites

  • 1 cup raw walnuts
  • 1 cup raw almonds
  • 2 1/2 cups of pitted dates
  • 3/4 cup cacao powder or unsweetened cocoa powder
  • 2 Tbsp cacao nibs
  • 1/4 tsp sea salt
  1. Place 1 cup walnuts and 1 cup almonds in food processor and process until finely ground.
  2. Add the cacao powder and sea salt and pulse to combine. Transfer to bowl and set aside.
  3. Add the dates to the food processor and process until small bits remain. Remove and set aside.
  4. Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor or blender spout.
  5. Process until a dough consistency is achieved
  6. Add the brownie mixture to a small parchment lined 8x8 dish
  7. Lift parchment paper to remove brownies from dish and use hands to slightly squeeze in the sides to create a smaller square - this will make the brownies slightly thicker and more dense.
  8. Transfer back to dish and place in freezer or fridge to chill for 10-15 minutes before cutting into 12 even squares
  9. Feel free to add frosting or powdered sugar to top!
  10. Store brownies in an airtight container to keep fresh. Will keep for 3-4 days at room temperature, or in the freezer for at least 1 month!
